Is your cheese suitable for vegetarians?
Yes, our cheese is suitable for vegetarians, we use a microbial rennet (non-animal) to make our cheeses.
Where can we purchase your cheeses?
Depending on the region, our cheeses can be purchased in stores, such as Whole Foods, Safeway, Trader Joe’s, Costco, Draegers, Mollie Stone’s, Oliver’s, Gelson’s, Cheese Plus, Bi-Rite, HEB, and more!
What is the outer layer on Brie?
The outer layer on Brie is called the rind, which is part of the aging process on Bries.
Can you eat the rind on Brie?
Yes, you can eat the rind on Brie. It is meant to be enjoyed as part of the cheese!
How is Petite Breakfast different than other types of Brie?
Petite Breakfast differs from typical Bries because it is not aged, and wrapped when it is fresh and young, therefore it does not have a rind.
Where does the milk come from to make your cheese?
Our milk comes from neighboring dairies all within a 15-mile radius of our creamery.
Is your milk rBST free?
All of our milk is rBST free, we have a contract with our milk producers to guarantee this.
How long has Marin French Cheese been making cheese?
Marin French Cheese started in 1865, and we have never stopped making cheese, making us the longest continually operating cheese company in America.
Can we visit the property?
Yes, we welcome visitors every day to our property on Hicks Valley Ranch. Our store is open daily from 8:30 – 5:00. Enjoy free cheese tastings, our café with soups and sandwiches, and hot and cold beverages. Enjoy a picnic by the pond, or walk around our grounds and enjoy the scenery of West Marin.
Can we tour the plant?
Unfortunately, we cannot offer tours of our plant, but encourage visitors to stop by our store and property.
Can we freeze your cheese?
We do not recommend freezing the cheese. Cheese is a living product with cultures to ripen during its shelf life. Freezing the cheese kills the cultures, causing taste and texture to change. Check the shelf life before buying cheese to know how long you can keep it to avoid freezing.
Why is Schloss orange?
Our Schloss is orange because it is hand-washed several times in brine, it then ages to develop its distinctive orange-hued rind from Brevibacterium Linens (B. Linens). B Linens are naturally present in the air around the Marin French Cheese ranch so we do not add any B. Linens to our cheese during the process.
How long the cheese should be out of the fridge before serving?
It is best to leave your cheese out one hour prior to serving.
What is the difference between Brie and the Camembert?
Brie and Camembert differ because of the cultures that are used when making the cheese.
Is your cheese non-GMO?
Our cheese is not certified non-GMO.
Is your cheese gluten-free?
Yes, all our cheese are gluten-free.
Is it normal to taste ammonia in the cheese?
Yes, this is normal to taste ammonia. The taste comes from the natural aging process.
Is your store open all year round?
Our store is open daily from 8:30 – 5, except for major holidays.
May I bring my dog to your store?
We do not recommend bringing your dog.
May I use a grill on the property?
Open fires are prohibited

May we picnic on the property?
Absolutely! Our grounds are reserved for our customers only.  The retail store has everything you would need for a great picnic.
What’s the best way to serve cheese?
Take cheese out of the fridge one hour prior for the best serving. Pair with your favorite wine, beer, crackers, bread, or nuts! Cheese pairs well with many items, or add your favorite jams or jellies for an extra twist!
What temperature should I serve Brie?
Brie is best served at room temperature. As a general rule, take your Brie out of the fridge one half hour before serving.
What’s the best way to store my leftover Brie?
We recommend using cheese paper for storing leftover Brie, but wax paper is the next best option.
Can we order your cheese online?
Yes, you can order our cheese online through our online store, or GoodEggs We offer gift baskets and build your own baskets on our store site
Does your cheese use pasteurized milk?
All Marin French cheese uses pasteurized cow’s milk. Because they are aged less than 60 days, the milk must be pasteurized by law.
