Berry and Brie Croissant Breakfast Bake

 6 Large Croissants, cut into 1½ inch chunks (ideally use day old croissants or cut your croissants in advance to dry them out)
 2 cups Fresh Mixed Berries—strawberries, blueberries, raspberries and blackberries
 2 wheels Petite Breakfast 4oz, cut into small cubes
 4 Large Eggs
 1 ¾ cups Whole Milk
 ¼ cup Granulated Sugar
 1 tsp Vanilla Extract
 ¼ tsp Ground Cinnamon
 Pinch of Kosher Salt
 Powdered Sugar, for garnish
 Maple Syrup, for serving

Preheat oven to 350°F. Spray a 9x13 baking dish with nonstick cooking spray.

Take the croissants and spread them evenly into the bottom of the baking dish. Sprinkle the mixed berries and brie pieces over the croissant layer.

Next, in a medium mixing bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and a pinch of kosher salt. Mix until well combined. Pour the mixture over the croissants, berries, and brie in your baking dish. Make sure all the croissant pieces are well soaked.

Soak the croissant mixture in the fridge for at least 20 minutes. If time permits, allow the croissant mixture to soak overnight for optimal absorption. Once the croissant mixture is done soaking, place it into the oven. Bake for 30 to 40 minutes or until golden brown and the center is set.

Once baked, remove from the oven and let cool before serving. Garnish with powdered sugar and a drizzle of maple syrup on top.
