Thanksgiving Triple Creme Sweet Potato Bites

Baked Sweet Potato Rounds with Triple Crème Brie

 2 large Sweet Potatoes
 Dried Cranberries
 Toasted (or Candied) Pecans or Walnuts
 Olive Oil
 Fresh Thyme
 Salt & Pepper

Preheat Oven to 425°F

Slice sweet potatoes into ½ inch rounds

Lightly coat sweet potato rounds with olive oil, salt and pepper and place on oven safe sheet.

Bake for 10 minutes, then flip each round and bake another 10 minutes, until lightly browned and soft all the way through.

While baking, slice your Triple Crème Brie into thin wedges.

When sweet potato rounds come out of the oven, place a slice of cheese on each hot potato round. Melting is good!

Sprinkle your sweet potato rounds with dried cranberries, toasted or candied nuts and garnish with fresh thyme.
